2025 Signature Organic EVOO
Our 2025 Signature oil is a unique early harvest style with fruity, herbaceous aromas and a gentle peppery finish. Cold pressed from green and turning colour olives, varieties include the rare Bouqettier, Mission and Verdale. This certified organic oil is unfiltered, unrefined and lovingly hand-bottled in small batches.
Our heritage trees in the Grampians rely solely on natural rainfall. Once picked, olives are cold pressed immediately producing a low yield of ultra-premium organic olive oil - beautifully concentrated in flavour and full of life. On average, each heritage tree produces just one precious litre - so every 2L cask reflects the harvest of two full trees and a year's worth of care. It's a true taste of the Grampians - capturing the character of the land and the season.

Judges' comments: "Fresh green herbal aromas with sweet banana, lime, and ripe bush tomato. Moderate transfer to the palate with hints of endive, citrus, and bitter greens. Creamy mouthfeel with a snow pea shoot tendril astringency. Balanced bitterness and pepperiness with a moderate length."

Due to the drought and heatwave conditions at flowering, this year’s harvest was significantly reduced (around 20% of a normal year). To help ensure fair distribution of our Signature organic oil among our community, order limits apply. We understand this is disappointing and appreciate your patience and support - it means a lot during challenging times.
When will you restock larger sizes?
We're hopeful of a better crop for our 2026 harvest. As a single-estate, dryland olive grove, we rely entirely on natural rainfall - it's a big part of what makes our organic oils so special and unique. But it also means in low seasons, bulk sizes are not available and/or sell out quickly. In the meantime, we're offering our 2025 Robust EVOO in bulk - originally for chefs, now available for both home and professional kitchens.

100ml, 250ml & 500ml glass bottles have a pourer insert to control flow.
2L casks (bag in box) - have a tap which provides great drizzling control and is drip free (turn off the tap until you feel a click). Our casks are also BPA free and keep oil fresher for longer by excluding air.
4L tins - have a pull up pouring spout.
15L casks and 20L tins both have taps, and include a free empty bottle and pourer for easy decanting.
We offer free shipping on orders over $100 - for smaller orders we offer $9.95 subsidised flat rate shipping.
Free shipping offers apply within Australia, with the exception of bulky orders to distant and remote areas. In this situation we offer heavily subsidised shipping.
