Warm Wild Duck Salad

Ingredients:

  • 1 roasted medium rare duck, boned out and sliced
  • 2 rindless bacon rashers, sliced thinly
  • 4 mushrooms, sliced thinly

SALAD

  • 4 to 6 serves of mixed lettuce
  • 6 strawberries, quartered
  • ½ cup diced cantaloupe
  • ½ cup diced watermelon
  • 125 grams cherry tomatoes, halved

DRESSING

  • Mix together 2 tablespoons golden orange balsamic vinegar
  • 2 tablespoons lemon pressed extra virgin olive oil
  • 2 tablespoons pomegranate syrup or juice

Method:

Add duck, bacon and mushrooms to a hot pan, fry till crispy, remove from heat.

Mix all salad ingredients in a bowl, add ½ of the dressing, mix well and place in individual serving bowls.

Top with crispy duck mixture and dress with remaining dressing, serve.

Variations: Seasonal stone fruit of your choice.
