2026 Signature Organic EVOO
Our 2026 Signature is an exceptionally well-balanced early-harvest certified organic extra virgin olive oil, with complex fruity and herbaceous aromas, a smooth mouthfeel and a gentle peppery finish. With total biophenols (polyphenols) of 316 mg/kg, it offers freshness and intensity without excessive bitterness.
First cold pressed from green and turning-colour olives, it brings together heritage varieties including the rare Bouquettier, Mission and Verdale. The oil is certified organic, unfiltered, unrefined, and hand bottled in small batches on our family farm.
Our dryland trees at the foot of the Grampians rely entirely on natural rainfall and produce very low yields. On average, each tree gives us just one precious litre of oil, so every 2 litre cask represents the annual harvest of around two full trees.

Limited availability
As a single-estate, dryland olive grove, we rely entirely on natural rainfall. This gives our organic oils their distinctive character, but it also means production varies from season to season. Our 2026 harvest was improved, and bulk sizes are available again. However, 20L tins are limited to one per customer, helping us share this oil fairly among more customers who have been waiting for it. For a more economical option, our 2026 Robust EVOO is also available in bulk sizes. Originally produced for chefs, it is now available for both home and professional kitchens.

100ml, 250ml & 500ml glass bottles have a pourer insert to control flow.
2L casks (bag in box) - have a tap which provides great drizzling control and is drip free (turn off the tap until you feel a click). Our casks are also BPA free and keep oil fresher for longer by excluding air.
4L tins - have a pull up pouring spout.
15L casks and 20L tins both have taps, and include a free empty bottle and pourer for easy decanting.
We offer free shipping on orders over $100 - for smaller orders we offer $9.95 subsidised flat rate shipping.
